whats the best way to get fit/prepared for fights on short notice..

you won't have long enough to change your technique to suit your opponent as you're old habits are stored in muscle memory... so work on conditioning more than anything. sprints etc.

A good way is to maintain a good level of fitness year round, and then hammer the training hard in the short space that you may have as notice (ie 1 week) to bump your fitness up a notch. Then try and remain paced and relaxed when you fight so that you dont blow your wad straight away, and dig deep, it wont be easy but it can be done.
Alternatively just try and KO the guy early and if it doesnt happen and you gas just DQ yourself out of the match by fouling
Take time off work/school/study and train like a Thai twice a day.

Short notice is less than a week isn't it?
Or maybe 2 weeks?
Anything outside of that is quite achieveable.
I'm not sure how helpful these guys' answers are but if you have a train like a devil for 1 or 2 weeks
you might be in for a surprise to find out that things might give way. So you can get fit but you
should obviously avoid overtraining, injury, and fatigue.

None really. I always found putting more emphasis into breathing correctly in sparring. I find alot of reltively new fighters breathe well on the pads but hold their breath during fights and sparring due to the nerves, when you dont have anything in the tank to start with holding your breath will finish you. Use every opportunity that you are not kicking or punching (or being kicked or punched) to suck in the deep breaths. Stay away from the grapple, garunteed to burn you. Keep a good poker face and watch your posture, you dont want the judges or your opponent to know your gassed. Keep it simple when in there, use a stiff jab and leave the head kicks at home. If your body is not used to a high training load your body will not adapt to a massive work load, so going to crazy will take its toll

Ha every fight iv had has been on very limited notice, a good game plan is usually all that will help. No point over doing it with fitness on short notice you will just burn yourself out.
