I'll try run down the list of my opinion, there will be a few blanks.. i can only answer for muaythai fighters though.. a few will be incorrect no doubt =D

53kg; Couldnt say.. i dont know who is still active at that weight, but theres only a few..
55kg; Aaron Leigh
57kg; not too sure if Aaron fights at 57, but it would be a **** up between him and Chris White
60kg; wouldnt have a clue who is on top of this weight in aust.
63kg; as above.

I really think from 66-76kgs is the best weight range in australia, lots off strong up and comers and existing fighters make for great matchups.
66kg; Soren Mongkontong (if he still gets down to that weight?)
68kg; Soren Mongkontong
72.5kg; Wayne Parr
76kg; Eugene Ekkelboom
79kg; A **** up between Chad Walker and Danny Derdowski, bit of a stagnant weight class at the moment..
83kg; Much like 79kgs.. quite a stagnant weight class atm, Chad would probably take it.
86kg; Carnage really owns 86-89 atm, dont think he gets down to 79 anymore lol.
89kg; Carnage
95kg; Slowinski (even if he is no longer based in aust =P)
95kg+; Slowinski
